A sophisticated new restaurant concept inspired by the area’s rail history and classic travel hospitality.
Esplanade Restaurant Limited, owners of St. Lawrence-area institutions Old Spaghetti Factory and Scotland Yard, engaged us to validate, conceptualize, and execute a new venue on The Esplanade.
When an opportunity to take over a new space arose, ERL looked to us with a cocktail bar in mind. Our conclusion: while a cocktail bar for the neighbourhood was a great idea, the space was too big. We recommended, to split the space and include an additional concept: Eloise.
Taking cues from the area’s history as a 19th century rail hub, Eloise is inspired by a golden age of train travel and hospitality.Eloise is the 'dining car' of a patron's journey through the evening, leading eventually to Bar Cart, the ‘bar car’ and speakeasy cocktail bar hidden just beside.
